Tony’s family made the journey from the Albanian coast to Fort Myers and brought their kitchen traditions with them.
The foundation of the menu starts with the dough. It ferments for 48 hours, gets stretched by hand, and bakes directly on the stone floor of the wood-fired oven.
That slow, old-world process helps create a pizza that stands apart from many of the other spots along Tamiami Trail.
And because Amantia is still new, many people in Fort Myers have not discovered it yet.

The pizza is lighter than you might expect, with a crisp char around the crust that crackles when you fold a slice.
